This mix is a rich Cajun flavor with spicy flare. It's loaded with sun-dried tomatoes, celery, and other natural ingredients to give it a unique, rich, full flavor. Also makes a zippy seasoning on meat, fish and poultry. As a dip, best served with vegetables, tortilla or potato chips. Sensational with onion rings or french fries. Makes several batches.
Preheat oven to 350°. Rinse chicken and place in a 13x9x2-inch baking pan. Sprinkle dry, unprepared Cajun Dip Mix over chicken breasts. Next distribute celery, peppers and onions evenly over chicken breasts. Pour the 2 cans of diced tomatoes over all and top with water. Cover with foil and bake approximately 1-1/2 hours, or until chicken is cooked and tender when fork is inserted. Serve over white rice.
